Distillation is a process of making alcoholic spirits from the fermented liquid. In the process of Distillation the alcohol which is presented in the fermented liquid is separated from the water by vaporization and condensation.

Usually the alcoholic spirit is obtained by three different types of Distillation methods.
- Pot still
- Patent still
- Carter -head still

Let's first talk about Pot still Distillation.
Pot still
Pot still Distillation method is regarded as a world's finest Distillation method, because the world's Best top finest alcoholic spirits is obtained through Pot still Distillation.

The pot still shape looks like a 'Big onion' and it has two parts.
- Still/kettle
- Condenser with spiral tube
The first part of the still/kettle is designed to hold the fermented liquid and upper part condenser/swan neck is designed to hold captured alcohol rich vapour.
When the distiller makes any spirit from pot still method ,the spirit must be distilled at least two times. The first still is called 'wash still' and the second still is called ' spirit still' . When the temperature reaches around 172°F (78°C) the alcohol vapour rise , passes through the spiral tube. After that it's cooled down by the cold water container and the spirit having alcoholic content around 30%.
After that the next process is Spirit still , where the drink is carried out of higher alcoholic content approximately between 75 - 80% . Due to higher alcoholic content the obtained spirit is diluted with the water to come down the alcoholic percentage at 40% abv.

Patent still
Patent still is also called coffee still or continues still. Patent still still is designed like many of pot still are stacked on top of each other. In this system the alcohol is separated from the fermented liquid by hot steam.
When the is vapour it bounces around the fermented liquid following down to the next chamber which is located below and the alcohol vapour by following on to the Top.
The patent still method is the quickest method to get the spirit compared to pot still. The obtained spirit is also congener free and high in alcohol.
Some spirits like Vodka, gin, grain whisky, corn whisky, white rum , and so on are obtained by patent still.
Carter - head still
The Carter head still first originated in the 19th century and built by Carter brother. This is still specially designed to make Gin.

In this distillation method the still having a Big basket full of botanicals placed on the top, which allow the alcohol to pass through it. When the vapour passes through the botanicals it picks the flavouring from the ingredients.
Here are the two best spirit brands like : 'Hendricks' Gin and 'Reyka vodka' are the two finest spirits produced from Carter head distinction method.
